Hairong Cheng

Hairong Cheng is a Faculty member in the School of Life Sciences and Biotechnology at Shanghai Jiao Tong University. Her research focuses on synthetic biology of sugar reducing sweeteners, with an emphasis on developing efficient yeast synthesis systems and improving production through metabolic engineering. She has published several studies on the synthesis of functional sugars and alcohols, including fructooligosaccharides, galactooligosaccharides, xylitol, trehalose, and isomaltulose. Her work involves the use of yeast surface display technology and metabolic engineering to enhance bioproduction processes.
